Tarragon

With its powerful flavour, tarragon is very suitable for soup, salads and stews. Tarragon is great to add to poultry, fish, shellfish, scrambled eggs and all kinds of meat (ex. Gourmet). Tarragon is essential in béarnaise sauce, and is nice as well in tartar sauce and Hollandaise sauce. Its strong perfume is often used to enrich wine vinegar.
