Tagliata di manzo with green basil oil
- 800 grams of steak
- 800 grams of baby fries (or fries)
- 8 cherry tomatoes
- 1 big pot of basil
- 5 spinach leaves (optional for color)
- 2 dl olive oil
Steak 1 hour in the sous vide at 51,5°C.
Cut the baby tomatoes in half and season with pepper and salt (and some herbs) and pour over with olive oil richly. Next, arrange everything into an oven dish and bake for 35 minutes. In the last 10 minutes of baking, you can add in the cherry tomatoes.
Put the basil leaves and spinach in a blender. Add pepper and salt to taste. Add in olive oil while blending. Use a strainer to end with a nice and smooth oil.
